maybe use the pre-made pico to throw into meals for flavoring?

Thank you, I wish none of us were feeling this, it's HARD!

That's what I usually do if I don't feel like making any. It's a little more than I want to spend on the possibility of receiving chopped onions with bits of color but none of it goes to waste if I do. I used to make a big jar of it and make salsa out of it after a couple of days. Some days I can totally do that -- I love how it smells (thankfully covid had mercy there), but I make less at a time now and buy premade salsa, and that has worked out pretty well.
